Leftovers… something else to be thankful for

Whew!
Thanksgiving might be over, but the things to be thankful for continue on.
I’m mostly thankful that no one has made me cook for the last few days. Saturday was the day for making turkey soup, and my freezer is stocked. And other than some eggs and reheating, I’ve been off the clock... at least in the kitchen.
But somehow, sadly, the laundry doesn’t do itself.
Leftovers are still on the menu... as there were no culinary disasters this year, and once again, I made too much food. No one was really that surprised around here.
Ideas for leftover stuffing would be much appreciated... I think that potato soup might be next on the menu, unless someone decides to dig in to the mashed potatoes in the very near future.
Looks like I’ll be needing to find more room in the freezer... and there will be a few more days over the winter that I will be thankful for getting a day off from the stove.
That time off from cooking allowed for a little “R & R” after I set the soup to simmer, going so far as procrastinating with the plans to get my tree up the weekend after Thanksgiving in favor of some reading and sewing this weekend.
And it will be close enough to count if the tree is decorated and plugged in by Thursday.
It’s still earlier than I’ve managed to get my tree up in recent history, that’s for sure.
Being so busy over the last couple weeks, I have been less plugged in to the daily travails of politics on Twitter and social media in general, which has been much better for my outlook on life in general, but has left me feeling more than a little out of the loop when it comes to the details of what’s happening politically.
Everyone in my house has been pretty thankful for that.
That doesn’t mean I’m not paying attention, I’ve been following the state hearings and testimony regarding voter fraud allegations, and nominations put forth by the Biden team.
Neither leave me with feelings of thankfulness.
Maybe that can be a topic for a later day, when I’m feeling less thankful.
Honestly, today I’d rather look out my windows and watch for another deer like the one I saw Tuesday morning when writing this column. Or the cardinals eating corn on my patio as I enjoy my morning coffee, even though I think I might have to relocate their snack area after Sarek discovered he could catch said cardinals.
I definitely wasn’t thankful when I discovered what he left outside the sliding glass door... but my 90 pound puppy’s exuberance at bringing me a prize was contagious...after the disposal of course.
